Dear friends,
Today is all about gözleme, the Turkish flatbread that’s simple to make at home and so delicious. In fact, I’ve just made a version with spinach which was amazing!
But before heading into this week’s recipe, I wanted to give you an update on what’s happening behind the scenes.
As you may remember, I’ve been working on merging the content from the newsletters with my website, so everything’s in one place. This work as now almost complete!
Barring any last minute hiccups, I’ll be launching the “new” A kitchen in Istanbul in the next week or two!

This is more than a visual update, though. Much more importantly, I’m adding additional features, like an ingredients page, easier-to-navigate archives and ad free browsing.
Once it’s live, I’ll also be switching paid subscriptions back on. Paid subscriptions will offer more benefits than previously, but will remain optional.
But more on all of that when we relaunch.

Gözleme with potato filling
If you've been to Turkey, you've surely seen gözleme. Usually prepared by a lady in traditional clothing, fried on a saç, a round and slightly curved griddle.
Gözleme is a simple but delicious stuffed flatbread. It can be made with a variety of fillings.
My favourite? Potato, mixed with feta cheese, butter, herbs and a couple of spices typical of Turkish cuisine.
Just perfect for a weekend lunch!
The dough is a simple, non-yeasted one. If you don't have a saç, no problem. A large cast iron pan does the job equally well.
Please enjoy this recipe, and feel free to adapt the filling to your choice. As mentioned, I made a version with spinach today, and will be adding it to my website soon! Other popular options include cheese or ground beef.
