Norwegian lefse with cinnamon butter cream
A traditional recipe that's been an essential part of my Christmases.
I’m dedicating this year’s final free newsletter to the concept of lefse (soft, usually sweetened flatbreads) and its place in Norwegian food culture. That’ll be with you in a few minutes, but in this email, I’d like to share with you a recipe that’s been a staple of my family’s Christmas traditions for as long as I can remember.
Lefse are perhaps the most quintessential part of Norwegian food culture. Each village has their own specialties of the genre. This recipe is a good place to start, as it’s simple to make and doesn’t requite any special equipment.
The recipe is based on the one my mother uses. I’ve made some substitutions to make it viable outside of Norway but, slightly to my surprise, the flavour is exactly as I remember it.
