Great to hear! Not sure about the exact chemistry at work, but the soda water helps make the pastry crispy. I've tried other liquids, too, but the one with soda water makes all the difference for getting the correct texture of these böreks.
And I know it's not your question, but if anyone else is reading this and wondering if they can use vegan mince instead, the answer to that would be no – it'd likely be too bland. Since there are few spices in the mix, the flavour of the meat is important here. So lamb yes, vegan mince no :)

Hi Vidar. This recipe looks lovely but we don't eat beef so I wonder, would it work with minced lamb instead?
